Gobel Madeleine Pan

Great minds think alike. Imagine our surprise, to find in the Winter 2013 edition of Food and Drink Magazine, an article about Madeleines. We were planning to tell you about the traditional French cookie made in the Madeleine pan, as well. Madeleines are small, traditional cakes originating in northeastern France, baked in pans with shell-shaped depressions, with a flavour similar to (but lighter than) pound cake.
Enjoyed best with tea or coffee. Get baking.

Citrus Madeleines

Serve with coffee or tea.

Ingredients:

3
½ cup
2 tsp
¼ tsp
¾ cup
½ cup
1/3 cup
½ tsp

eggs
unsalted butter
lemon zest
vanilla
all purpose flour
sugar
fine grind almonds
salt
Icing sugar for dusting (optional)

Directions:

  1. In a large bowl cream together eggs, butter, zest and vanilla.
  2. In a separate bowl combine the dry ingredients.
  3. Add the dry to the wet mixture.
  4. Divide batter between 24 madeleine cavities.
  5. Bake at 350˚F for 12-15 minutes or until golden around edges.
  6. Loosen edges with knife tip and allow to cool on cooling rack.
  7. Dust with icing sugar if desired.

Easy French Baguette

Serve warm with your favourite friend, wine, and cheese or spread.

Ingredients:

1 ½ cups
2 pkgs
2 tsp
3 ¼ cups
1 tsp

warm water 100˚F
active dry yeast (about 4 1/2 tsp.)
granulated sugar
flour
salt

Directions:

  1. Mix warm water, yeast, and sugar. Let it sit 5 minutes until foamy.
  2. In a large bowl mix flour and salt.
  3. Gradually add the yeast mixture to the flour, and stop when it forms a ball.
  4. Knead for 5 minutes, using additional flour if needed.
  5. Cut the dough in half and shape into 2 baguettes: to make them pretty,
    roll each half of dough into a rectangle and roll up lengthwise.
  6. Pinch the edges to seal and place on baguette pan
  7. Cover with a clean kitchen towel and allow to rise in a warm place for 30 minutes
  8. After rising slice loosely down the middle of each baguette with the tip of a sharp knife.
  9. Preheat oven to 450 degrees.
  10. Fill a 2nd cookie sheet with water and place it on the bottom rack of the oven.
  11. Once preheated, place the cookie sheet with the baguettes on the middle rack and bake 25 minutes or until crusty.
