Cream of Asparagus Soup by Pia Wiesen

Swiss Diamond Cookware

  • 2 pounds white or green asparagus trimmed and peeled
  • tsp sugar
  • cup + 1 tbsp butter, unsalted
  • 3 tbsp flour
  • 1 cup fresh parsley finely chopped
  • Salt and pepper to taste
  • Pinch of nutmeg


  1. Put the asparagus into a big pot. Cover with cold water.
    Add the sugar, and 1 tbsp. of butter and a little bit of salt.

  2. Bring to a boil and simmer for 5-6 minutes or until the asparagus is soft. Take the asparagus out of the water and set aside. Reserve the liquid.

  3. In another pan melt the remaining butter over medium heat, add the flour and mix until you have a smooth mixture, known as a roux. Add some of the asparagus water and stir quickly until any lumps are gone. Add more liquid, turn up the heat and keep stirring. Bring to a boil. Add more liquid until it is all used up and the consistency is creamy. Add salt and pepper and a pinch of nutmeg.

  4. Take only a few stalks of the asparagus and chop them up finely to add to the creamy soup (eat the rest as a cold salad if you like)

  5. Add the parsley and mix gently. Serve
