French Madeleines


  • 90 g Butter
  • 3 Eggs
  • 90 g Sugar (Icing sugar or very fine sugar)
  • Pinch Salt
  • 1 Package Vanilla sugar
  • 90 g Flour
  • Grind of Lemon and Orange
  • 1 oz Rum
  1. Melt butter over low heat, take of the burner and let cool.
  2. Mix eggs, sugar, salt and vanilla sugar until very creamy.
  3. Fold flour, lemon and orange grind and rum into the mix.
  4. Slowly add the cool butter.
  5. As required grease the pan and fill the dough into the forms.
  6. Preheat oven to 200º C
  7. Place form in the middle of the oven and bake for 15 minutes or until golden brown
  8. Place madeleines on cooling rack and let cool.
  9. Decorate with a dusting of icing sugar or dip half the Madeleine into semi sweet chocolate glaze.

Ingredients for French Toast

  • 1 loaf Sourdough or French bread cut into bite size pieces
  • 8 Eggs
  • 2 cups Milk
  • 1/2 cup Whipping cream
  • 3/4 cups Sugar
  • 2 Tbsp. Vanilla

Ingredients for Streusel topping

  • 1/2 cup All-purpose Flour
  • 1/2 cup Brown sugar
  • 1 tsp. Cinnamon
  • 1/4 tsp. Salt
  • cup Butter


  1. Grease a 9 inch x13 inch casserole dish
  2. Break or cut bread up into bite size pieces and place in the casserole dish
  3. In a large bowl mix eggs, milk, cream, sugar and vanilla
  4. Pour over bread
  5. Cover and refrigerate overnight
  6. Preheat oven to 350º F
  7. Make streusel topping while oven heats up. Place all ingredients in a bowl and cut together using a pastry blender or two forks.
  8. Spread over bread and egg mixture and bake for 45-60 minutes depending on your taste.
  9. Serve warm with butter and maple syrup.
