HrBasic Vegetable Soup

Basic Vegetable Soup

Ingredients:

  • 4 tsp. olive oil
  • 1 onion, diced
  • 2 carrots, dice
  • 2 garlic cloves, minced
  • 1 celery stalk, diced
  • 2 cups cabbage, chopped
  • ½ cup white cooking wine (optional)
  • 4 cups chicken or vegetable broth
  • 1 lb Potatoes, dice
  • 1 cup peas
  • Salt and pepper and spices to taste

Directions

  1. Heat the olive oil in a large saucepan or Dutch oven over medium-high heat until simmering. Add the onion, season with salt and pepper, cook, stirring occasionally, until translucent, about 5 minutes.
  2. Add the carrots and garlic, cook, stirring occasionally, until the garlic is fragrant, about 2 minutes.
  3. Add the celery and, if using, any additional vegetables and herbs and spices of your choice and cook an additional 5 minutes. If using, add the wine (for some acidity) and cook, stirring occasionally, until the alcohol has reduced by about half, about 2 minutes.
  4. Add the broth, potatoes and peas. Let the soup come to a boil, then reduce the heat to low simmer, uncovered, until the potatoes are done, about 15 to 25 minutes.
