How to Make Maple Taffy in the Snow

  1. Take real maple syrup and heat over a fire or on the stove until it reaches the “soft ball” stage (235°F).
  2. Take the hot syrup (be very careful) and pour on clean, untouched snow, in straight lines.
  3. Take a popsicle stick and roll along the line of maple syrup, gathering up the syrup as it hardens!

Maple Bacon Jam

Maple Bacon Jam

Use this jam on waffles or pair with your favorite cheeses such as cheddar or brie.

Ingredients

  • 1.5 pounds thick cut bacon, chopped
  • ½ cup maple syrup
  • 1 red onion, medium, diced
  • 2 shallots, diced
  • ½ cup water
  • 1/3 cup balsamic vinegar
  • 3 tbsp. dijon mustard
  • 3 tbsp. Worcestershire sauce
  • Salt and pepper to taste

Directions

  1. In a medium sauce pan cook the onions and shallots until translucent. Add the bacon and sauté to brown.
  2. Add remaining ingredients and let simmer for 1 hour on low heat until reduced and thickened.
  3. Using a blender, pulse the thickened sauce to make a spread.

Prep Time 1.5 hours
Makes 1.5 cups
