Rice Pilaf



  • 8 Slices of bacon, diced
  • 1 Medium onion, finely chopped
  • 2 cups Regular, long-grain rice
  • 2 cups Frozen green peas
  • 2 cups Water
  • 1 ½ cups Chicken broth
  • 1 ½ tsp Salt
  • ¼ tsp pepper


Cook bacon in skillet until crisp.
Remove bacon from pan with slotted spoon and drain on paper towel; set aside.
Remove all but 2 tbsp. of bacon drippings from skillet. Add chopped onions to skillet and cook until tender (about 5 minutes).
Add rice, frozen peas, water, chicken broth and salt & pepper to mixture.
Heat to boiling.
Reduce heat to low; cover and simmer for about 20 minutes or until rice is tender.
Toss in bacon bits until well mixed.
Transfer to serving dish and serve immediately.
