Lemon Tea Bread

A simple, but classic loaf that goes wonderfully with your next cup of tea or coffee.

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1/3 cup milk
  • 2 tsp grated lemon peel
  • 1/2 cup chopped walnuts (optional)

Glaze:

  • 1/4 cup freshly squeezed lemon juice
  • 1/3 cup granulated sugar

Preheat oven to 350F. Grease a Kaiser or Emile Henry loaf pan.

Sift together flour & baking powder and set aside.
Using an electric mixer, beat butter & sugar until fluffy.
Using low speed of mixer, beat in flour mixture alternately with milk (beginning & ending with flour).
Stir in lemon peel and nuts.
Spoon batter into pan and bake 55-60 minutes or until cake tester comes out clean.
While loaf is baking, mix sugar and lemon juice in a small saucepan to make glaze.
Pour glaze evenly over loaf as soon as it is removed from oven.
Cool in pan for 10 minutes.
Remove to a rack and let cool completely before serving.
