Dean’s All-Time Favourite Crème De Menthe Squares
- 1 ¼ cups Butter or margarine
- ½ cup Unsweetened cocoa powder
- 3 ½ cups Icing sugar
- 1 egg beaten
- 1 tsp Vanilla
- 2 cups Graham cracker crumbs
- 1/3 cup Crème de menthe
- 1 ½ cups Semi sweet chocolate (chips is fine)
Combine ½ cup butter and cocoa power. Heat and stir until well blended.
Remove from heat (microwave is fine).
Add ½ cup icing sugar, egg and vanilla.
Stir in graham cracker crumbs and mix well.
Press into bottom of ungreased 13” x 9” pan.
Melt ½ cup butter.
Add crème de menthe.
Mix in, on low speed, the remaining 3 cups of icing sugar, until smooth.
Spread over base, and chill for 1 hour.
Combine remaining ¼ cup butter and chocolate. Melt and stir until melted.
Spread over middle layer.
Chill 1-2 hours, and then cut into small squares.
