Zesty Lemon Mousse
- 1 package (7g) Unflavoured gelatin
- ¼ cup Cold water
- 1 tbsp Grated lemon rind
- ½ cup Lemon juice
- 1 cup Granulated sugar
- 2/3 cup Plain yogurt
- 1 cup Whipping cream
In saucepan, sprinkle gelatin over cold water; let stand for 1 minute to soften.
Stir over low heat until gelatin dissolves.
Stir in lemon rind, lemon juice and half of the sugar.
Stir in yogurt.
In bowl, whip cream with remaining sugar; fold into lemon mixture.
Spoon into parfait glasses or serving dish.
Cover and refrigerate for 2 hours or up to 1 day.
Makes 6-8 servings.
