Bacon and Onion Quiche
My favourite bake form company “Kaiser Backform" celebrates 90 years in business this year and we are waiting for the latest in spring forms.
A great recipe with a glass of wine is this
Bacon and Onion Quiche
Use a 12 inch spring form or the new conical spring form for this recipe
To make the dough:
1 ¼ cups flour
1 egg
1 ½ stick of cold butter (3/4 cup)
1 tsp salt
Quickly mix all ingredients to make a short pastry crust.
Let the dough cool off for at least an hour before rolling it out to a circle large enough to fit the spring form including the sides. Cut off the overlapping dough from the rim.
To make the filling:
1.5 kg. onions
4 tbsp canola oil
200 g (7 oz.) bacon, cut in cubes
1 bunch parsley
4 eggs
¾ cups heavy cream
½ cup sour cream
Salt and freshly ground pepper
200 g (7oz.) grated Gouda cheese or cheddar cheese
Peel the onions and cut them in half before cutting them into slices. Heat 2 tbsp of oil in a pan, and sauté the onions; season to taste with pepper and salt. Fry the bacon until crisp, and add it to the onions. Chop the parsley and mix it with the eggs. Stir in cream and sour cream and season with pepper and salt.
Spread the onion mix inside the spring form and add the egg batter, and sprinkle with the grated Gouda or cheddar cheese.
Preheat the oven to 180ºC/350ºF
Bake for 50-60 minutes.
