Baked Squash

Medium butternut squash, halved and seeded |

Butter |
½ cup |
Maple syrup |
½ tbsp. |
Cinnamon |
½ tsp. |
Nutmeg |
½ tsp. |

Chopped pecans |
- Preheat oven to 350F.
- Place squash halves, cut side down, on baking tray.
- Bake for 45-60 minutes, until flesh is tender.
- Remove from oven and scoop out flesh, reserving shell.
- Beat the squash with 6 tbsp. butter, syrup, cinnamon and nutmeg until light and fluffy.
- Fold in the pecans and then scoop mixture back into shells. Dot with remaining butter.
- Return squash to oven and bake for 10-15 minutes, until hot.
- Serves 6.
