Baked Squash

Medium butternut squash, halved and seeded

9 tbsp.

Butter

½ cup

Maple syrup

½ tbsp.

Cinnamon

½ tsp.

Nutmeg

½ tsp.

Salt

½ cup

Chopped pecans

  • Preheat oven to 350F.
  • Place squash halves, cut side down, on baking tray. 
  • Bake for 45-60 minutes, until flesh is tender.
  • Remove from oven and scoop out flesh, reserving shell.
  • Beat the squash with 6 tbsp. butter, syrup, cinnamon and nutmeg until light and fluffy.
  • Fold in the pecans and then scoop mixture back into shells.  Dot with remaining butter.
  • Return squash to oven and bake for 10-15 minutes, until hot.
  • Serves 6.
