Beer Beef Stew

 

3 pounds

Cubed stewing beef

Large onion

1

Bottle beer

½ tsp

Dried thyme

1

Bay leaf

3 tbsp

Vegetable oil

½ pound

Mushrooms

1 tbsp

Lemon juice (optional)

 

Salt & pepper to taste

 

  • Preheat oven to 325F.
  • Heat cast iron Dutch oven over high heat and add oil and meat.
  • Cover and cook for 10 minutes.
  • Uncover and boil down liquids as meat browns.  Stir constantly.
  • Add onions, seasonings and beer.
  • Place Dutch oven in the oven and bake for 1 hours.  Check periodically to ensure meat is covered with liquid (add water if necessary).
  • Meanwhile, sauté mushrooms in butter for approximately 3 minutes (until softened).  Add 1 tablespoon of lemon juice to mushrooms, and then add to meat mixture.
