Beer Beef Stew

- Preheat oven to 325F.
- Heat cast iron Dutch oven over high heat and add oil and meat.
- Cover and cook for 10 minutes.
- Uncover and boil down liquids as meat browns. Stir constantly.
- Add onions, seasonings and beer.
- Place Dutch oven in the oven and bake for 1 hours. Check periodically to ensure meat is covered with liquid (add water if necessary).
- Meanwhile, sauté mushrooms in butter for approximately 3 minutes (until softened). Add 1 tablespoon of lemon juice to mushrooms, and then add to meat mixture.
