Valerie's Favourite Turnip Apple Bake
My golf buddy Laurie passed this recipe onto me and it's excellent with turkey!
- 1 large turnip peeled and diced
- 2 Tbsp butter
- Salt & pepper to taste
- 2 or 3 large apples, peeled and sliced
- 2 Tbsp brown sugar
- pinch of cinnamon
Topping
- ¼ cup flour
- ¼ cup brown sugar
- 2 Tbsp soft butter
Preheat oven to 350. Grease 2-qt. casserole dish. Cook turnip in boiling salted water. When fork tender mash and add butter, salt & pepper. Toss apples with mix of 2 Tbsp brown sugar and pinch of cinnamon. Cover bottom of prepared casserole with mashed turnip. Add layer of apples. Repeat layers ending with turnip.
Topping
Mix flour and ¼ cup brown sugar and butter together with fingers until like coarse meal. Add more flour if needed for correct consistency. Spread evenly over top of turnip. Bake 1 hour.
Serves 8.
PS - sometimes I just make an apple bake - cut up the apples, sprinkle with the topping and bake - makes a great fall desert with vanilla ice cream.
