The Garlic Box’s Medjool Date Apple Salad with Apple Cider & Garlic Vinaigrette
- 5 Tbsp. Apple Cider & Garlic Vinaigrette
- 1 Tbsp. olive oil
- 2 Tsp. small red onion (diced)
- 1 Tbsp. Dijon mustard
- 1/2 Cup Medjool dates (pitted, cut in half, then sliced)
- 1 Head frisée lettuce (bite size pieces)
- 4 Cups spinach
- 1 Apple, cored then thinly sliced
- 1/2 Cup chopped pistachios
- 1 Pear, thinly sliced
- 2 Radishes, thinly sliced
- Salt & pepper to taste
Mix Apple Cider & Garlic Vinaigrette with oil, onion and mustard in a bowl until well blended.
Add remaining ingredients to a large mixing bowl and season with salt and pepper to taste.
Toss in dressing and serve.
