Coleslaw with Tangy Yogurt Dressing

This coleslaw can be refrigerated up to 1 day dressed, or 3 days undressed. Serve as a side, dress a burger or fish sandwich or stuff in a pita.

¼ tsp

1/2 small green cabbage, cored and finely shredded
small carrot, peeled and coarsely grated
small red pepper, diced
plain yogurt
apple-cider vinegar
coarse salt
Freshly ground pepper



  1. Combine cabbage, carrot and red pepper in a large bowl.
  2. Whisk yogurt, honey, vinegar, salt and pepper in a small bowl.
  3. Toss with cabbage mixture.

The term coleslaw is a late 19th century term, originating in the United States. The name is said to have derived from the Dutch phrase “kool sla”, with “kool” meaning cabbage and “sla” meaning salad. So in essence — cabbage salad!

Tips for using a mandoline:

  • Always position the mandoline in front of your body, so the direction of the cutting and slicing is straight out from you and not moving left or right across your body.
  • As you move the food over the blades, press down on the grip and move it using even pressure and a smooth motion, which will result in more consistent cuts and thickness.
  • Some food items going through the mandoline may need to be cut into smaller pieces or shapes prior to slicing with the mandoline.
