Valerie's Favourite Olive Bread


Olive BreadThis is a bread machine recipe using Canadian flour. Enjoy this bread plain or to put it over the top, dip into a herbed oil mixture with some balsamic vinegar drizzled in.

To make a large - 2lb loaf:

  • 1 ¼ cups Warm Water warm
  • 1 ½ cups All-purpose flour
  • 1 ½ cups Whole wheat flour
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Grated Lemon Peel
  • 2 Tbsp Sugar
  • 2 Tbsp Olive Oil
  • ¼ cup Chopped Green Olives
  • 1 ½ tsp of Yeast

Use 2lb or large loaf setting on your bread machine.
I've had success with the French Bread setting (3hr 45min) with a light crust - each machine is different so you'll have to experiment.
