Cast Iron Blackberry Cake

 

2 cups

Flour

1 ¼ cup

White sugar

3 tsp

Baking powder

1/2 tsp

Salt

1 cup

Milk

2

Eggs

¼ cup

Vegetable oil

1 tsp

Vanilla extract

3 cups

Blackberries (or your favourite berry)

¼ cup

Butter

½ cup

Brown sugar

½ cup

Chopped pecans

Dash

Cinnamon

Dash

nutmeg

 

  • Preheat oven to 375F.
  • In a cast iron skillet melt ¼ cup butter.
  • Add brown sugar and stir until blended.
  • Remove from heat and add chopped pecans, cinnamon and nutmeg.
  • Spread the berries evenly over the bottom of the pan and set aside.
  • Mix flour, sugar, baking powder and salt together.
  • Add milk, eggs, vegetable oil and vanilla extract to flour mixture.
  • Mix well.
  • Pour cake mixture evenly over berries and place skillet in oven for 45 minutes or until cake tester inserted in the middle of cake comes out clean.
  • Run a knife around edge of skillet while still warm, place a plate upside down over the skillet and flip the skillet to remove the cake.
  • Serve warm with ice cream or freshly whipped cream!
