Cast Iron Blackberry Cake

Blackberries (or your favourite berry) |

Butter |
½ cup |
Brown sugar |

Chopped pecans |

Cinnamon |

- Preheat oven to 375F.
- In a cast iron skillet melt ¼ cup butter.
- Add brown sugar and stir until blended.
- Remove from heat and add chopped pecans, cinnamon and nutmeg.
- Spread the berries evenly over the bottom of the pan and set aside.
- Mix flour, sugar, baking powder and salt together.
- Add milk, eggs, vegetable oil and vanilla extract to flour mixture.
- Mix well.
- Pour cake mixture evenly over berries and place skillet in oven for 45 minutes or until cake tester inserted in the middle of cake comes out clean.
- Run a knife around edge of skillet while still warm, place a plate upside down over the skillet and flip the skillet to remove the cake.
- Serve warm with ice cream or freshly whipped cream!
