Michele's Oatmeal Cookies

  • ½ cup Butter
  • ½ cup White sugar
  • ½ cup Brown sugar
  • 1 Egg
  • ½ tsp Almond extract
  • ¾ cup All purpose flour
  • ½ tsp Baking soda
  • ¼ tsp Salt
  • 1 ¼ cup Oatmeal

Optional: (add in any combination)

  • ½ cup Chopped almonds
  • ½ cup Chocolate chips
  • ¼ cup Unsweetened coconut
  • ½ cup raisins

Preheat oven to 350F. Grease cookie sheets or line cookie sheets with parchment paper. Bake for about 7 minutes. Cookies should only brown on edges and appear to be DEFINITELY undercooked - this makes them chewy!
